4th of July Treats and More!

As the fourth of July approaches, here are some treats that a BBQ sparkle, pop, and fizz! Over the years of hosting and attending family parties below are my favorites.





Desserts/ Treats:


Fourth of July Cupcakes

Cupcakes Yields 12

A lovely classic vanilla cupcake with some festive flair!




Ingredients:

Cupcake base:

  • 1 1/2 cup of all-purpose flour

  • 2 eggs, room temperature

  • 1 cup of white sugar

  • 1 tsp of baking powder

  • 1/2 cup butter, room temperature

  • 1/4 tsp salt

  • 1 tsp vanilla extract

  • 1/2 cup 2% milk

Vanilla Frosting

You can make homemade vanilla frosting or used jar-ed frosting. ( 3 cans of vanilla)

  • 1/2 cup butter, room temperature

  • 1/2 tsp pure vanilla extract

  • 3 cups confectionary sugar

Directions:

Cupcake Base:

  1. Preheat oven to 350 degrees. Line a 12 count cupcake tin with liners, set aside.

  2. In a large bowl, beat flour, eggs, sugar, baking powder, salt, butter, and vanilla extract. Next, gradually beat in milk.

  3. Fill cupcake liners with batter and bake 12 cupcakes for 15-18 minutes or until the cupcake test done.

  4. Cool cupcakes on a wire rack.

Frosting:

If you want to make the vanilla frosting red or blue, make homemade frosting or take jar-ed frosting and mix in 3 drops of red food coloring or blue food coloring.

  1. While cupcakes are in the oven, create the frosting.

  2. In a large bowl, cream together butter, confectionary's sugar add vanilla.

  3. Beat until light and fluffy.

  4. Spoon frosting into a disposable piping bag and pipe away.

  5. Top with red, white, and blue festive sprinkles and serve.






American Fruit Flag skewers


Ingredients:

  • Strawberries, sliced thinly

  • Blueberries

  • Bananas, sliced


Directions:

  1. Slice your fruit.

  2. Lay it out in the form of the American flag Lay design on a cutting board or large rectangular dish. Blueberries in the top left corner and alternate strawberries and bananas to mimic the red & white strips.

  3. Once designed, skewer fruit and place the final product on serving dish





American Flag Jello shots

These contain alcohol to make virgin ones, just don't mix the alcohol, or use vanilla pudding as your middle

.


Ingredients


  • 1 packet of strawberry jello

  • 1 packet plain gelatin

  • 1 packet of blue raspberry jello

  • Rumchata or vanilla instant pudding.

  • Clear shot glasses or a brownie tin


Directions:

  1. Follow each direction for the jello packets.

  2. Combining the clear gelatin & Rumchata, follow instructions on the jello pack, once the jello powder is resolved in water, pour in 1 shot of the rum chat and whisk.

  3. Create each level while the other layers are cooling in the fridge, each level takes 1/12 hours to 2/12 hours to set.

  4. Once each color is dissolved and cooled put one layer in at a time in your shot glasses or brownie tins. refrigerating each level takes 1/12 hours to 2/12 hours to set.

  5. After all, are in the layers are set, If being created in a brownie tin, cut into squares, layout on a tray, and serve.




To test if jello layers are set, gently tap, if it is springy and your finger is clean, cut, or serve shots as in glasses








Appetizers:

These small finger foods are simple, refreshing, and easy! Whether you need something in a pinch or something to dance on your tastebuds these will do the trick!


Basil, Tomato & Mozzarella Skewers






Ingredients

  • Cherry Tomato's

  • Fresh Basil

  • 1 container mozzarella balls

Directions:

  1. Wash cherry tomato's & fresh basil

  2. Rip fresh basil leaves in half.

  3. On a toothpick, stick, tomato, piece of basil, and mozzarella ball.

  4. Serve with balsamic dressing as a dipping sauce.



Strawberry Salsa


Ingredients:



  • 1-pint strawberries, hulled and finely diced.

  • 1 jalapeno, stem, and seeds removed, finely diced. (or Serrano pepper if you want a milder heat)

  • half of a small red onion, peeled and finely diced (about 1/2 cup)

  • 2/3 cup finely chopped fresh cilantro, loosely packed.

  • juice of 1 lime, about 2 tablespoons.

  • (pinch of salt and black pepper)

  • tortilla chips or blue corn tortilla chips


Directions:


1. Toss all ingredients together until combined. Season with extra salt and pepper, if needed.

*If you would like a sweeter salsa, feel free to stir in a few teaspoons of warmed honey.




Radish Sandwiches

Yields 12



Ingredients:

  • 12 Radishes

  • Butter

  • Saltine Crackers


Directions:

Wash and thinly cut the radishes into slices

  1. Slice pieces of butter, thinly

  2. Spread butter on the cracker

  3. Assemble sandwiches




Entreé's:


Tri-colored Pasta Salad

Yields 8, if you need to make more, double the recipe

Ingredients:

  • 1 box Tricolored Fusilli (cork skew) pasta

  • 2 heads of Broccoli

  • 2 Red & Green Peppers, thickly diced

  • Cherry tomatoes halved

  • 1 can of pitted Black Olives, halved

  • 1 Zesty Italian dressing


Directions:

  1. Cut your broccoli into small little pieces

  2. Follow the directions for cooking the pasta

  3. Heat water and boil your broccoli for 10-15 minutes

  4. While pasta & broccoli is cooking dice your peppers into a thick piece

  5. Drain & half your olives

  6. Cut cherry tomatoes in half

  7. Drain pasta & broccoli and let them cool

  8. After pasta is cooled and broccoli is cooled, place all your ingredients in a large bowl, add your Italian dressing and toss until everything is well coated in dressing.

  9. Refrigerate for 4-6 hours then serve.


Homemade Bacon Cheese Burgers


If you don't have time to make your own hamburgers from scratch, I recommend Bubba Burgers. You can put them on the grill frozen! They are quick, easy, and super tasty. Just follow the instructions on the box.


Ingredients:

  • Ground chop meat of your liking

  • 1 pound of bacon

  • 1 pound of swiss or cheddar cheese

  • Yellow onion

  • Garlic Powder

  • Salt & Pepper


Directions:

  1. Take your meat out of the package, in a large mixing bowl, combine your meat, salt, pepper & onion powder, diced yellow onion, diced cheese & cut uncooked diced bacon

  2. Once everything is mixed on plastic wrap, shape your burgers and wrap them up and store them in the fridge if not being used right away. If eating right away, transfer on a pre-heated grill, and cook them to the desired burger wellness.

  3. Serve with your favorite burger toppings!
