Apple Crisp Cupcakes

As summer is sizzling out and fall is blowing in, try these autumn-inspired cupcakes! As a little girl, I grew up going apple picking with my family & making apple crisp. This fall I wanted to turn an apple crisp into a cupcake! To get a jump start into fall see the recipe below!







Serves: 12 cupcakes


Ingredients:

Cupcake Base

  • ⅔ cup butter softened

  • ¾ cup brown sugar

  • 1 ¼ cups flour

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • ½ teaspoon ground cloves

  • 3 eggs

  • 1/4 cup of vegetable oil

Apple mixture

  • 1 ⅔ cups of Honey Crisp apples (or any kind of red apple), diced (roughly 2-3 apples)

  • 1 tablespoon brown sugar

  • 1 teaspoon cinnamon

  • 1 teaspoon nutmeg

  • 1 teaspoon vanilla extract


Cream Cheese Frosting

  • 1 (8oz) package cream cheese, softened

  • 1/4 cup butter, room temperature

  • 3 cups confectioners' sugar

  • 1 teaspoon vanilla extract


Crisp Topping

  • 1 tablespoon flour

  • 2 tablespoons crushed grahmcracker

  • 1 tablespoon brown sugar

  • 1 tablespoon butter


Directions:


Cupcake Base:

  1. Line a 12 pan cupcake tray with cupcake liners and heat your oven to 350 degrees Fahrenheit.

  2. In a small bowl, sift the flour, baking powder, cinnamon & cloves together, gently stir to combine.

  3. Cream together the butter and sugar in a large mixing bowl.

  4. Gradually add the sifted mixture to the creamed butter and sugar mixture.

  5. Next beat in your eggs

  6. Once the cupcake batter is ready, scoop it into the cupcake liners.

  7. Bake cupcakes for 10-12 minutes

  8. Once cupcakes are cooled, take out the centers with an apple corer, or a knife 2/3's down the middle.

Apple Compote Mixture:

  1. In a saucepan add your Honey Crisp Apples, brown sugar, nutmeg cinnamon & vanilla, and put it on medium-low heat.

  2. Once your apples are coated and caramelized, take off the heat and rest until cool.

  3. After the mixture is cooled, use a teaspoon or a tablespoon to spoon the filling into the cutout center.

Frosting:

  1. In a medium-sized bowl, combine the cream cheese, butter confectioners sugar & vanilla.

  2. Beat until the consistency is medium thickness.

Crisp Topping:

  1. In a small saucepan combine your crushed grahmcracker, brown sugar flour, and butter on medium-low heat.

  2. After gram cracker are coated, take it off heat and cool.

Decorating

  1. Once the center is filled with your apple compote, use your favorite frosting tip & frost your cupcake.

  2. To garnish: Top with the grahmcracker crumble and thin apple slice.

  3. Serve & enjoy.
